Butterbur

ふき

A Japanese-native wild vegetable cherished since ancient times as a herald of spring. Aichi Prefecture leads national production through greenhouse cultivation. The flower buds, 'fukinoto,' appear in February-March as the first messengers of spring. After removing bitterness, fuki is used broadly in simmered dishes, tsukudani, kinpira-style preparations, and stir-fries. Rich in dietary fiber
