Kaga yasai (Kaga renkon and Kinjiso)
A general term for traditional vegetables passed down from the Edo period in the suburbs of Kanazawa. Kaga renkon has strong stickiness and is characterized by not falling apart easily when boiled, making it an essential ingredient for Kanazawa oden (hot pot) and Jibuni (traditional stew). Kinjiso is a summer vegetable with beautiful reddish-purple leaves, and has the property of developing color when made into a vinegared dish, a unique item that colors the dining tables of Kanazawa.
Noto kaki (oysters)
Oysters raised in Anamizu Bay and Nanao Bay on the Noto Peninsula. Not exposed to the rough waves of the open ocean, they grow slowly over 2 to 3 years in inner bays where nutrient-rich water flows from the mountains, resulting in thick meat and concentrated umami. The season is from November to March, and direct sales experiences of grilled oysters are held in production areas like Anamizu Town.
Ruby Roman Grape
A premium grape developed by the Ishikawa Agricultural Research Center and registered as a variety in 2007 (first shipped in 2008). Each berry must weigh 20 g or more, achieve Brix 18+, and match colour-chart level 3–4. Shipped in a narrow July–September window, with an annual opening auction at Kanazawa Central Wholesale Market that regularly generates global headlines — the 2023 record reached ¥1,600,000 for a single bunch.

Ishikawa has a contrasting topography stretching north to south with the Noto Peninsula and the Kaga Plain, and seasonal winds from the Sea of Japan and snowmelt water from the Hakusan mountain range form the foundation of its agriculture and fisheries. The Noto Peninsula features a continuous complex coastline and calm bays, developing good fishing grounds for marine products such as oysters, sweet shrimp, and snow crabs. Fugu (tiger pufferfish) is also caught off the coast of Wajima and is known as Wajima fugu (pufferfish). The Ruby Roman Grape is a large-grain high-grade variety developed by Ishikawa, and high prices at the market's first auction become a topic of conversation.

Agricultural Profile of Ishikawa
A structural feature of Ishikawa's agriculture and fisheries is that two poles, the Kanazawa food culture sphere and the bounty of the Noto sea, coexist within the prefecture.
