Hida-gyu

Among Japanese Black cattle fattened in the Hida region, only beef graded as yield grade A or B and meat quality grade 3 or higher by the Japan Meat Grading Association's carcass trading standards can use the name Hida-gyu. It is characterized by fine marbling and rich umami, and is distributed at butcher shops and restaurants in Takayama City, as well as at department stores and through mail order.

Fuyu-gaki

A sweet Persimmon variety mainly produced in Motosu City and Mizuho City, Gifu. It is a completely sweet Persimmon with soft flesh and high sugar content, and it has few seeds, making it easy to eat. The harvest season is from late October to November, and Gifu's Fuyu-gaki production volume ranks high nationally. Those packed in cosmetic boxes for gifts are handled as standard autumn gifts at department stores in the Chukyo metropolitan area.

Summer-autumn Tomato and Eringi

Gifu's summer-autumn Tomato is shipped from high-altitude areas such as Nakatsugawa, Ena, and Hida from June to October, and has the strength of a production area where quality is stable even in midsummer. Eringi cultivation centers on facility cultivation in the Hida region, and it is one of the main products of mushroom production in Gifu. Due to its thick texture and versatility in cooking, demand is high for both commercial and home use.

Climate & Agriculture of Gifu

Gifu is located almost in the center of Japan and is broadly divided into the northern Hida region and the southern Mino region. The Hida region is a mountainous area with an elevation of 1,000 m or more, and the climate of heavy snow in winter and cool summers creates an environment suitable for raising beef cattle. Hida-gyu (beef) is raised in this Hida region, and only Japanese Black cattle that clear strict standards can use the brand name. The Mino region forms part of the Nobi Plain, where the Kiso, Nagara, and Ibi rivers flow, and is an area where paddy rice farming and dry field farming are active. Gifu ranks high nationally as a production area for Fuyu-gaki (Persimmon), and cultivation utilizing the warm climate and well-drained soil is carried out especially in the Persimmon production areas around Motosu City and Mizuho City. Summer-autumn Tomato utilizing high-altitude areas is a stable supply product to the Chukyo metropolitan area, and is produced in high-elevation farmlands in the Ena and Nakatsugawa regions and the Hida region. Eringi (king oyster mushroom) is a major mushroom item in Gifu, and mushroom production facilities are concentrated in the Hida region. Ayu (sweetfish) of the Nagara River is known as a symbol of clear streams, and many anglers visit during the summer decoy fishing season.
