Daikon Radish

大根

One of the most consumed vegetables in Japan. Chiba Prefecture leads national production. Used in a wide range of dishes including oden, yellowtail-daikon stew, grated daikon, and pickles. The upper, middle, and lower sections differ in spiciness and texture, and using the right part for the right purpose is a cornerstone of Japanese culinary wisdom

Taste & Texture

Sweeter near the top and progressively spicier toward the tip. Winter daikon gains sweetness from cold temperatures and is juicy. Grating brings out the pungency
