Fukaya negi
Fukaya negi (green onion) is a branded green onion cultivated primarily in Fukaya City, Saitama, and has national recognition. Grown in the alluvial soil spreading across the lowlands along the Tone River, Fukaya negi is characterized by a strong sweetness when heated. Saitama's green onion production is 48,500 tons, ranked 2nd nationally. As a "village of green onions," Fukaya City's mascot character "Fukka-chan" features a green onion design.
Komatsuna
Saitama produces 13,000 tons of Komatsuna, making it the 2nd nationally ranked production area. Originally, Komatsugawa in Edogawa Ward, Tokyo, is the origin of the name, but currently, the adjacent southern part of Saitama is the largest production region. It has a high calcium content among vegetables (170mg/100g according to the Eighth Revised Edition), and because it has little astringency, it is also suitable for eating raw.
Taro
Saitama's Taro production is 16,600 tons, ranked 1st nationally. The water-retaining soil of the Kanto loam layer is suitable for Taro cultivation, and the area around Tokorozawa City and Iruma City is the main production area. It is cultivated throughout the prefecture as an ingredient supporting the simmered dish culture from autumn to winter.
Climate & Agriculture of Saitama
Saitama is located in the center of the Kanto region plain, with the Arakawa and Tonegawa river systems flowing through the prefecture. The annual average temperature is about 15℃, and the annual precipitation is about 1,300 mm. In winter, a dry northwest wind called "karakkaze" blows, while summers become hot and humid.
